Sarson ka saag is a winter delicacy made in Pakistan with fresh mustard greens and other green leafy vegetables.
It’s usually served with makki roti (a flatbread made with maize flour), a dollop of butter and makes a nutritious meal! This time of the year, the market is full of leafy greens like spinach, sarson (mustard greens), bathua (chenopodium), methi (fenugreek) etc. Since these leafy greens are in abundance, there are used in number of recipes and one of my absolute favorites is Punjabi Saron ka Saag!
As soon as December would arrive, I would be after my mom to make sarson ka saag and makki's roti. The hot saag and rotis topped with dollop of butter such a special meal.
Sarson ka saag is very lightly spiced, it’s the fresh flavor of the greens that shines through and that’s what make it so delicious!
Ingredients and spices that need to be Take to make Saag Mutton:
- 2 kg desi sarson ka Saag
- 1/2 kg palak (Spanish)
- 50 gm Methi leaves(fenugreek)
- 100 gm Bathua leaves(chenopodium)
- 10 green chillies
- 25 gm fresh coriander leaves
- Salt to taste
- 1 tbspn red chilli powder
- 1 tbspn coriander powder
- 2 tsp Cumin seeds
- 50 gm wheat flour/maize flour
- Water as required
- Tarka Ingredient
- Desi ghee as required
- Butter
- 1 tbspn Ginger and Garlic paste
- 1 onion chopped
- For mutton
- 1/2 kg Mutton
- 2 Onion sliced
- 6 cloves garlic
- 1 tbspn whole spices
- Salt to taste
- 1 tsp Cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 2,3 green chillies chopped
- 3 tbspn yogurt
- 1 tbspn Ginger paste
- 1/2 tsp garam masala powder
- 2 tomatoes puree
- Water as required
- Desi ghee as required
Steps to make to make Saag Mutton
- Saag ko chail ke bareek kaat lain gandlon samait katna hai wash kar lain.
- Palak b saf kar ke kaat lain. Wash kar lain.
- Bathu aur Methi ke leaves b alag kar ke kaat lain aur wash kar lain.
- Mein tu cooker mein bana laiti hun cooker mein aik jug Pani dal ke garam karein phir saag aur salt dal dain aur stove per cook honay rakh dain.
- Jab sag cook honay lgye tu palak add kar dain cook karein spoon wood ka use krna ha Jaise doi khty hyn.
- After 10 minutes Methi and Bathu leaves add kar ke cooker ka dhakan band kar ke wait dein dain low flame per pakne dain.
- Jab 10 minutes whistle chal jye. Tu cooker side per utar ke check kar lain (agar pani add krna ho tu garam add karein thanda nahi)
- Saag ko sahi cook hony ka pata tab chalta hy jab uska clr change ho jye yellowish sa. Water hy tu bilkul dry karein.
- Phir thanda kar ke blender mein dalein green chillies,red chilli powder, half coriander leaves and wheat flour dal ke achy se grand kar ke pan mein nikal ke stove per rakh dain.
- Take ke achy se cook ho jye. Mein saag ko is trha paka ke freeze Kar daiti hun jitni zarorat ho usay tarka laga daite hun.
- Mene aaj tu mutton mein bnya ha. But tarka ke liye karahi mein desi ghee dalein aur onion dal ke golden brown karein. Phir ginger and garlic paste add karein cook well add cumin seeds and coriander powder (salt and chilli check kar lain agar kam hon tu add kar lain)cook well saag add kar ke cook kar lain saag ready hy chopped coriander leaves garnish karein. maize/wheat flour ki roti ko butter laga ke saag mein butter dal ke serve karein.
- Cooker mein mutton onion slices, garlic cloves whole spices,salt and water dal ke cook honay rakh dain.
- 8-10 minutes whistle chal jaye stove se hata ke thanda kar ke dhakan utar ke mutton check kar lain gal jye tu all spices, tomatoes puree dal ke cook karein. (Mutton zaida gala hona chahiye)
- Phir desi ghee aur yogurt n green chillies dal ke bhoon lain garam masala powder add karein.
- Add saag,butter jitna apny banana ho and cook well. Garnish with chopped fresh coriander leaves.
- Garam roti ko butter laga ke saag mein butter dal ke serve karein.I cannot imagine eating saag without ghee or butter!.
- Tip.. saag ko agar dosre din dobrah tarka laga ke khaein tu taste dobala ho jata hy.
