- Wash and cut all vegetables in medium size pieces.
In a grinding jar add mustard seeds, poppy seeds, coriander seeds, green chilli, black pepper and make a fine paste by adding water. - Heat oil in a thick bottomed kadhai/pan splitter panchforan, add cauliflower cook for 2 minutes in medium - high flame then add potato, carrots, onions and beans. Cover and cook for another 5 minutes. Stir often.
- Add ginger-garlic paste and turmeric powder mix everything well. Keep flame on low. Cover and cook for anoter few minutes, stir often.
- Now add all remaining chopped vegetables and salt. Cover and cook. When vegetables get soft add spices paste that we prepared earlier mix everything together.cook for another 5-8 minutes in medium flame. Stir often.
- Add 1 & 1/2 cup water. When its start boiling Cover and cook gor another 2-3 minutes. Turn off flame. Garnished with chopped coriander leaves.
- Serve hot with rice, chapati, puri or paratha.
