- Grind onion and tomato into a smooth paste.

- Take a pan and heat oil. Then add all the vegetables except capsicum. We need to add capsicum later as it cooks soon. Add little salt and fry for 5 minutes.
- Now add capsicum and fry for 2 minutes. Then transfer all the vegetables into a plate.
- To the same pan put 4-5tsp oil. Add ginger garlic paste and the onion tomato paste. Add little salt. Remember we already added salt while frying vegetables, so add it little.
- Then add turmeric powder and cook for 5 minutes until the rawness of the onion and tomato goes. Then add Kashmiri red chilli powder and garam masala powder. Fry for a minute.
- Since paneer cubes are frozen we need to soak them in lukewarm water for 2minutes.
- Now add the same water used for soaking paneer to the fried mixture and boil. Then add the fried vegetables and cook for a minute.
- Then add fenugreek leaves/ kasuri methi and cook for a minute.
- Now add the paneer cubes and cook for 2 minutes. Don't overcook to retain the softness of the paneer.
