- Wash and soak the rice in plenty of water for 30 minutes. Boil Chana.
- Wash and chop spinach. Make purée after boiling.Heat oil in heavy bottomed pan Splutter the cumin seeds, bay leaves,cloves and add onions,Saute until light brown and add the ginger-garlic paste and cook for 2 minutes in medium heat. Now add the rice and cook 90%.
- Heat oil in a thick bottom and deep pan or pot. Add all the whole spices.
Fry for some seconds or till the oil gets fragrant.
Add the sliced onions & fry till they are browned. Remove some of the fried onions for garnishing.
Add the ginger-garlic paste and fry for some seconds. Now add hing and saute for few seconds.
Add the chopped tomatoes and fry till the tomatoes becomes soft for 2-3 minutes. Add the spinach puré and stir. Saute for 3-4 minutes. Now all the dry spice powders one by one. - Now add boiled Chana.Add salt,Mix well.Cook for five minutes.Now in a handi put rice,then Chana mixture again rice.
- Add fried onions,chopped tomatoes,mint leaves then again Chana mixture.
- Tight with lid and keep on hot tawa for ten minutes.Serve immediately.
